Natural Cycle
There is the natural fermentation cycle.
The must goes through the CENTRAL DRAINAGE PIPE , and it naturally flows to the upper part of the tank, where it cools and comes down again. Now, passing through the PERFORATED SHEET METAL PANELS , it reaches the underlying cap of skins, and filters through the cap to return to its starting point. This process continues naturally until the fermentation is finished. N.B. THE CYCLE-SELECTION COVER must always be left open. Forced cycle By the fermentation system it is possible to influence the must, and this takes place during the cycle with heating and/or cooling operations, which takes place by heat exchangers and by the adding and mixing in of other products. The must from the EXTRACTION PIPE is moved by a simple pump placed at the top of the tank, and by a REMONTAGE PIPE. The MUST DISPERSION DISK allows the distribution of products over the surface, and there are REMOVABLE PERFORATED STAINLESS STEEL PANELS through which the must flows to reach the skin cap below, filtering again through the CENTRAL DRAINAGE PIPE , which is in the EXTRACTION PIPE.
N.B. While the cycle is taking place, the CYCLE SELECTION HATCH must be left closed. Then it must be opened again immediately after the end of the cycle. Usage This system is ideal for the heating or refrigeration of different types of must or crushed substances during fermentation.
