Criotank
Special tank for separating must from skins, supplied with removable internal grid, situated at the upper part of the tank. The Criotank comes with pressure tubes to release the air under the layer of skins. Such pressure tubes hinder the crushing of the tank when liquid transfer takes place, using high-performance pumps. The tank also features a mechanical door that opens upwards, for the purpose of discharging skins. Work cycle: Due to prolonged contact with the skins, the must becomes richer, absorbing the aromas from them. Therefore, maceration is both very important and delicate, and it may determine the alteration of color, as well as instability of the must if it is not properly cooled. The clean must is removed from the total discharge pipe and sent through the remontage tube, situated in the upper part of the tank. Here it falls on the mass of skins below, and filters through, once again, to reach its starting position. The must can be refrigerated during the process by a refrigeration system. The specific grid, made of a perforated stainless steel sheet, increases the liquid-extraction capacity from the skins, thereby cutting back further steps for this purpose, and facilitating the removal of the skins from the tank. In fact, when the door is opened, the skins fall by gravity due to the steep inclination of the grid (30%).
